Papillon Pastis is one of Arthur’s most beloved experiments—a labor of love inspired by the sun-drenched cafés of Southern France, but created with Napa-born spirit and Californian flair. Made with a proprietary blend of anise—an unexpected bunch of herbs—and other natural botanicals, this traditional French-style pastis offers a bold aromatic journey with every sip.

At 40% ABV, it's strong, but elegant. Add a splash of ice water, and you'll see it transform or "louche" (clouding) before your eyes—the spirit turns milky, opalescent, and floral. This “louche” effect is more than chemistry; it's part of the magic and tradition that Arthur fell in love with during his travels.

We Love It In: a classic French pour with 1 part pastis to 5 parts ice-cold water, over ice if you like. Try it before dinner with olives and a crusty baguette.
